Cooking by color isn't just about appearance; it’s an approach used by many professional chefs that embraces the connections between aesthetics, seasonality, and flavor. We’ll partner fruits and vegetables that share a color palette, embrace the monochrome, and touch on how the perception of color affects flavor. 

After touring our Market Garden and harvesting your own fresh produce with Farm Managers Sam and Jeremy, Chef Kristen will show you how to process a diverse selection of vegetables while pairing them based on their color shades. We’ll work around four main color palettes: red, white, green and yellow. In this hands-on class, you’ll learn about raw and cooked vegetable preparations, work with grains to add textural contrast, and learn how to invigorate the flavors of vegetables using sauces and vinaigrettes. And when we’re done, we’ll gather in the beautiful, light-filled dining room of our Cookhouse for a lunch that combines your creations and the perfect glass of wine.

We will attempt to accommodate special dietary requests related to the eight common allergens - gluten/wheat, milk/dairy, egg, soy, peanut, tree nuts, fish and shellfish - provided that you email us at chef@stonewoodny.org at least two weeks in advance of the class. Please include your phone number in the email so that we may call you to discuss the options we can offer.

All students will receive a printed menu, a packet of recipes prepared that day, and a Stonewood apron to use during the class. Aprons are available to take home for an additional donation.
