Two Pestos and a Pasta with Chef Daniel
Saturday, August 6th, 10am - 2pm
Everyone knows the classic pesto alla genovese made with basil and pine nuts, but there are many different pestos in Italy. Pesto, if fact, refers to the preparation (pesto means to pound or to crush), not the ingredients. Pestos can range from pesto agli agrumi (citrus), to pesto modenese (lard, cheese and herbs), to pesto rucola (arugula), to pesto alla trapanese (tomatoes), to many more.
You’ll start the morning with a walk in our Market Garden with Farmer Ellie to choose what is freshest from the garden – garlic scapes, kale, arugula – to prepare the Italian inspired lunch that will follow. Back in our Cookhouse, Chef Daniel will guide participants as they create authentic pasta, in three shapes, from scratch. Paired with the pasta, you will learn all about pestos and how to prepare them. Chef Daniel will also share his secrets of the geometry of pasta and how to pair the right pasta shape with the appropriate sauce. You’ll finish the morning with an Italian festa prepared by you and your classmates in the beautiful, light-filled dining room of our Cookhouse, paired, of course, with the perfect glass of Italian wine. And you’ll come away with recipes that will leave your family and friends hungry for more.
