Preserving the Summer with Chef Daniel

Ever wonder how to preserve all of that great, locally grown produce in the height of the season? Whether you're preserving your own harvest or you've purchased your produce locally, preservation methods like pickling and canning are ideal ways to enjoy the harvest-fresh flavors of summer throughout the winter months. Preserving also helps local farmers and is good for the environment because you’re eating locally year round, thereby reducing the distance your food travels to reach your plate; more often than not, the food we eat today is more well-traveled than we are!

In this class, Chef Daniel will first touch on the many methods of preservation, discuss how to get started, and help you decide how to stock your pantry. After touring our Market Garden and harvesting your own fresh produce with Farmer Ellie’s assistance, he’ll teach you the basics of pickling vegetables like cucumbers, onions, and cabbage to make condiments like bread and butter pickles, relish, and kimchee (Korean cabbage), and cover the tested guidelines for canning safely using the water bath method to make everyday staples like roasted salsa and tomato passata. You’ll finish the morning with a lunch in the beautiful, light-filled dining room of our Cookhouse. The meal will be accompanied by the preserved delectables prepared by you and your classmates and paired with the perfect glass of wine. And you’ll take with you the recipes you made so you can use your new knowledge to fill your home pantry in earnest.
