Cukes and Zukes with Chef Kristen | Wednesday August 16th, 10am to 2pm
Cucumbers and summer squash belong to the cucurbit family. Here in the Hudson Valley, their prolific productivity in August and short shelf life after harvest often outpaces our ability to use them. This class will help you enjoy their abundance in a myriad of ways.
After touring our Market Garden and harvesting your own fresh produce with Farm Managers Sam and Jeremy, Chef Kristen will help you learn how to approach these common vegetables with inspiring preparations. Together, we’ll explore methods that utilize the entire plant - from flower, to stem, to seed. Recipes will include charred cucumbers, curried zucchini and poppyseed bread, zucchini stem penne, and cucumber lemonade.
When we’re done, we’ll gather in the beautiful, light-filled dining room of our Cookhouse for a lunch that includes the fruits of our labor and the perfect glass of wine.
We will attempt to accommodate special dietary requests related to the eight common allergens - gluten/wheat, milk/dairy, egg, soy, peanut, tree nuts, fish and shellfish - provided that you email us at chef@stonewoodny.org at least two weeks in advance of the class. Please include your phone number in the email so that we may call you to discuss the options we can offer.
All students will receive a printed menu, a packet of recipes prepared that day, and a Stonewood apron to use during the class. Aprons are available to take home for an additional donation.
