Chef David Santos grew up surrounded by the rhythms of gardening, baking, and raising animals, all part of his everyday life as the son of Portuguese immigrants. His culinary aspirations were shaped early on by visits back to Portugal, where he started each day stoking the wood burning oven to bake bread with his aunt. At home in the United States, food remained the backbone of family life thanks to his mother’s garden and fruit trees and his father’s homemade wine.
After graduating with a degree in Culinary Arts from Johnson & Wales University in 2001, David traveled throughout Europe and South America, soaking up culinary heritage and cuisines rooted in peak quality seasonal ingredients. Upon returning to the States, David sharpened his culinary skills in some of the best kitchens in the country including Bouley and Per Se, Nicholas, and The Ryland Inn. But it was his Roosevelt Island supper club, Um Segredo, where he established his own culinary voice and quickly developed a cult following, which led to the opening of his acclaimed first restaurant, Louro, in the West Village.
Today, David helms Foxface Natural in the East Village, a cozy fine dining gem that celebrates natural wine, wild game, seafood, and wood-fired flavor. With a three-star review from Pete Wells of the New York Times, Foxface became an immediate success.
Expect a spirited, adventurous meal that celebrates the Stonewood Farm harvest in a whole new way. Come ready to play with your food!
