This September, we are delighted to welcome Chef Christine Lau, chef at Ladyfish in Portland, Maine and owner of the CLAU Group, to our Cookhouse kitchen. Christine has spent a career following culinary curiosity across traditions with unusual seriousness and depth. What has emerged is a cooking style that draws on cross-cultural influences anchored by a commitment to seasonality, locality, and the kind of balance that comes from knowing ingredients well.
This summer, Christine moved to Portland, Maine to open Ladyfish, a summer-only concept rooted in exceptional Maine-sourced seafood prepared with touches of her rich expertise in Chinese, Italian, Japanese, and Latin American cuisine.
Christine was raised in Oakland, California by parents from Hong Kong, and developed her Chinese American cuisine through her Bay Area upbringing, New York City experience, and deep appreciation for cultural diversity. Her culinary efforts have garnered national recognition, including Eater New York's 15 Best Dishes of 2020, Condé Nast Traveler's 2021 Hot List for Best New Restaurants, and Food & Wine's Best Bites of 2021.
In 2022, her restaurant Kimika was a James Beard Foundation Best New Restaurant semifinalist. Pete Wells of The New York Times praised the restaurant, writing that it takes a light touch to bring together Italian and Japanese cuisines without losing definition, and that at Kimika, that touch belongs to Christine Lau. In July 2023, Christine created the menu at Brooklyn's Chino Grande, a tribute to New York City's Chinese Latin American restaurants of the 1960s and '70s. In 2024, she served as opening consulting chef for the Michelin-recognized Current Charcoal Grill in Birmingham, Alabama, and was named a finalist for the prestigious Gold Chef Prize, awarded by Gold House and OpenTable to recognize rising Asian Pacific chefs.
Christine has been a familiar face at festivals and events nationwide, traveling across the country to consult and host pop-ups with some of today's most exciting chefs and restaurateurs, including Mason Hereford of Turkey & the Wolf; Wilson Tang of Nom Wah; Ji-Hye Kim of Miss Kim; Kevin Tien of Moon Rabbit; Sam Fore of Tuk Tuk Snack Shop; Shuai Wang of Jackrabbit Filly & King BBQ; and Silvia Barban of Briscola, Larina, and Tortelli. This extensive travel, particularly outside of the Northeast, has significantly influenced the menu at Ladyfish.
Her accumulation of experience is what gives Christine's cooking its particular quality and authority. We are very glad to have Christine at Stonewood this fall and hope you will join us.
